Cheese truffles with pistachios – recipe
Ingredients for approx. 24 cheese balls:
– 200 g Philadelphia
– 120 g Robiola (alternatively another cream cheese)
– 100 g mortadella, cut into cubes
– 100 g pistachio paste
– Salt and pepper to taste
– 100 g chopped pistachios (for turning)
Preparation of the cheese truffles:
1. prepare the cheese mixture: mix the Philadelphia and Robiola (we used fresh goat’s cheese) well in a large bowl.
2. add the mortadella and pistachio paste: Add the diced mortadella and pistachio paste to the cheese mixture. Mix everything well to obtain a uniform mixture.
3. seasoning: Season the mixture with salt and pepper to taste.
4. form cheese balls: Shape the mixture into small balls weighing approx. 18-20 g. It is helpful to moisten your hands from time to time so that the mixture does not stick.
5 Coat with pistachios: Roll the cheese balls in the chopped pistachios until they are evenly coated.
6 Serve: Place the finished cheese balls on a serving platter. Fresh herbs, edible flowers or crackers can be used for decoration.
